Single Serve Protein Cookie

This cookie was even better than my fudgy ones! Crispy outside and chewy center, it reminded me of those ginger snaps I used to plow through in college. Good thing this recipe makes only 1 cookie…

  • 2 rounded T protein powder (I used my SP Complete)
  • 1.5 T egg whites
  • 1 T coconut oil
  • 1/2 tsp baking soda
  • 1 T cinnamon
  • 1/2 T ginger
  • 1 1/2 droppers stevia (I used English Toffee)
  • sea salt

Mix everything together (except the salt) until batter forms. Plop onto small cookie sheet and sprinkle top with sea salt. Bake in toaster oven at 325 for 10-15 minutes, or until edges brown and center is firm. Please be energy efficient and use a toaster oven. If you don’t already have one, you should really invest in one…
